Yes, when Cvent Support updates the label, it would also be updated on the Payment widget. One thing to note is that the override is for attendee-facing labels only, it may not change the label on planner-side records.

Does this solution cover the payment portion of registration or only the personal information section? We are also looking for a way to change certain country labels but need it changed on both the personal information and payment sections of registration.

You can't edit it yourself. The label is system-defined, but Support can change it to "Taiwan" for your account or specific events. You can call the team at 866.318.4357 and press the IVR 1-1-1-1. The team can raise a request to get it changed.
How it works
Cvent uses ISO country names, so it shows "Taiwan (Province of China)" by default, and planners can't rename it directly.
Workaround: You can also create a custom contact field with your own list of countries. Note: This won't link properly to standard reporting, so it's only temporary.
