    We're wanting to offer a student discount code only available if they register using their student email. To enforce this, would I set up an advanced filter, email address domain, equal to .edu? Or do I do this another way?

    You are on the right track.
    Advanced filter  email address domain = schoolname.edu.
    You can also have it applied automatically.
