We do ask for flight information in registration so it's in reports for travel arrangements. Of course, they will not know this at the time of registration, so in confirmation we include the link to have them go back to add flights. Therefore, on that confirmation page, i include a section that is a call to action to 'Submit Your Flight Details' and then a description about the ask. I then rename the button to instead be Modify Registration to be Provide Flight Information. You could so similar logic for dinner ask, just rename that button on the confirmation page asking for dinner selection. Also, if there are Qs or areas within the registration I can hide at that point, I will.
Another solution is asking for information using feedback surveys. We do pre-event questions for content and feedback before events, and use that route. Might be a solution too.

I have an event already running, and I have added a new custom field for the attendees to RSVP to a side Dinner event.
Is there a way that I can send existing confirmed attendees an email, with wordings like "Please RSVP for the Dinner even Here", using {[E-MODIFY REG LINK: here]}.
I want them to go straight to the Modify Registration page directly, and not having them see confirmation page, We have received your registration!, which can be misleading.
