I highly recommend Cvent Academy. You may need to check with your account administrator to see if you have access to it. There are a lot of online courses that you can take which walk you through the process of creating an event from start to finish. The Event Management for Planners I & II learning plans are loaded with information on how to create your event in Cvent, as well as covering all of the tools available in the software. The course Building with Site Designer will teach you how to use the website design tool.
The Knowledge Base also has some good articles that walk you through each part of the process. I've linked a few that I've found useful below:
