Are your sponsors registering for their different sponsorship items/tiers in the registration process in Cvent? If so, then yes, you can create an invoice within the event that shows the item that they purchased, amount ordered, paid, due, etc. Managing Your Invoiceswill walk you through how to create an invoice within your event.
