Hello! 

I will be sending out a registration site for an upcoming event, with Registration Types/Admission Items.  My problem is we already have 2 admission items that are sold out. 

I need to know what steps I should take to be able to collect the personal information and guest names for the sold out items, without allowing new registrants to select the sold out items.

I think this makes sense.

Maybe create another admission item?  But if it's sold out, do you need that information?
Or are you creating a waitlist? In that case, you can't ask questions at the session or event level thar are waitlisted.
A workaround might be to create Custom Contact questions but that will only work for the invitee. May not work for the guest,

In addition to Steven's response, I would also suggest importing these people with a specific registration type into the system (if you already know who they are). Then, you can make the two admission items only limited to that specific registration type, so only those people can register for it. For everyone else, you'd want to create a separate admission item that isn't sold out so they can still get registered for the event.
