I created two custom reports. Currently the category is Attendees and Type is All Attendees. I'd like it to be only those who have Accepted. How can this report be modified?

The easiest way is to add a filter to your report.  open your custom report and go to the Filtering tab.  Under Advanced Filters select Status; Operator "equals"; Value "accepted".  Click save and that should give you only those that have accepted.
