We have sessions w/the same content offered on multiple days/ times. I’d like to use something like a Session Group format w/drop down menu but that doesn’t work bec the dates/times vary. What other options exist other than listing all separately?

Hi Barbara, this is exactly what session groups were made for! Each session can be created with it's own date/time. While the session group does require a placement date, you can hide it from the registration form by selecting not to display it in the session group settings:
