    How can I add in the report the special dietary selected by the participants?

    Assuming you probably built it as a question on your registration form, go to the question widget where you built the question. In the settings that come up on the right, fill in the question code and reporting fields, save/publish. Then go back to your report, and select data - > change report data at the top. select fields, and either use the search box to look for the question, or scroll down to the general registration questions section and select the question. If you don't see the questions as options to add, you may need to try a different kind of report.

    A handy little trick is to also use the Question Summary Report - which can provide you high-level info and the ability to drill down and export as well:
