    What happens in Cvent when I cancel a track?

    It's a bulk action in the Track itself.

    Does it make a refund?
    Does it unregister?  for only that track?

    I didn't see anything about what happens when cancelling a track, the closest I found was
    Cancelling Sessions

    3 Refund the registrants, if necessary. Registrants who have paid for the session are going to want their money back. Those who paid online, in full, during registration will automatically be refunded, and the refund will be processed 24 hours after cancellation. For everyone else, make sure you manually refund them.
     
    I believe when you cancel a track it will cancel the sessions registered for.
