@Gerri Baum, this seems like a lot of manual work. You could use invitation lists, registration types, admission items, or even an internal info fields to "slice and dice" attendees into different groups.
You could set up each "template" in each Invitation List you have and if you have an internal field, you can manually send the email to the specified attendee.
Yes, there is just one CC email field on each contact record, generally whoever is administrating the attendee's registration, or possibly a spouse.
I think there may be a great opportunity here for your organization to reconsider the communication strategy into something that is less manual and yet still specific to a particular attendee type.
If you use internal fields and mark yourself with each field value, you'd be emailed at the same time as all the other attendees.
Again, I understand the need to have some examples of emails and I urge you to take advantage of the more automated communication that is offered via Cvent's marketing tools.

Subject: Saving copies of or being CC'd on emails sent to participants/contacts
I often use templates to connect with many of our event participants. In doing so, I have a lot of emails that are customized for each participant or group of participants. My problem is twofold: 1) I'm not able to CC someone other than then the person noted as the contact's/participant's CC; 2) Unless I send the email to myself (which sometimes I can't do unless I'm registered for the event myself) I can not save or get a copy of the actual email to refer back to at a later date. I can only get a report or see in the individual's contact file that the message was emailed to him or her. I've asked Cvent numerous times to consider a solution for this, and even with the new Flex Management tool, there's nothing in it that resolves the issue. I'd like to know if anyone else has this issue and how you might have resolved it. Thank you.
