Just another tip: I've started keeping a document of how I set things up on the backend for my reference in the future. Almost like an SOP but not that detailed or precise. That's where I found my notes on this, because it confused me at first, too! We also have our staff registered for the event so that they can see everything the attendees do (we bring 80+ staff though) and add Staff Only sessions, so I had to go a step further and make sure those sessions were only accessible/visible to staff, but that staff could also see/access everything the attendees could.

So the session type is optional, but you have it associated to the admission items incorrectly. We host a large conference and every single session entered is an 'optional' session. However, since different registration types and different admission items had access to different things, we used session association to control what each type could see and what was included in their admission items.
Go to your admission items and select the one that you are working on for this problem. On the top tabs, navigate to 'Advanced Settings'. You will see a few sections here, but the two I'm talking about are Session Association (these sessions are considered 'included' in the admission item, even if their type is set to 'optional') and Session Availability (truly optional sessions that guests selecting this admission item can both see and choose). Make sure your lunch is NOT in the Session Association, but IS in the Session Availability.

Make it an optional item, not a included item in the agenda - but don't assign a fee. It'll show as something they have to select then, without incurring extra cost. You can include the phrase "included with your conference fee" in the item description to avoid confusion.

I have a meal that is "included" with the conference fee. However, I have it set as optional so that attendees will have to select if they will attend or not. This helps us with catering. However, when I test the agenda, it is still showing as "included with registration". How can update this to make the session be selected?
