At the moment, the mobile number field's default country is controlled by the system and can't be manually set to a specific country by planners. Today, the behavior is:

The default country/flag is based on the event's locale (and in some cases, the attendee's device), not a per‑event setting.

When attendees start typing their number, the system updates the flag based on the digits they enter, or they can pick their country from the dropdown, which will then populate the correct country code.
Product has confirmed that giving planners the ability to choose a default country (for example, always defaulting to +1 for US events) is on the roadmap, but it hasn't been released yet.
In the meantime, the best workaround is to:

Set the event locale to your primary country where possible, and

Add clear help text next to the mobile field (e.g., "Please begin your mobile number with +[country code]") to guide attendees.
