Hi Steven,
You can still change the text of a data tag using the method you explained above. I was able to replicate this issue and have sent it to our Product Team for further investigation.
In the meantime, we did identify a workaround that you can use. Instead of using the {[E-TICKET LINK]} data tag, you can use the {[E-TICKET URL]} data tag and edit the text.
For example: Just write any text > Please print your entrance ticket > Select text > Link > In url: Enter "{[E-TICKET URL]} " > Save the email
