Hi Melanie - you can only manage hiding or showing all attendees from the back end in Attendee Hub; however, and attendee can choose on their own profile to be visible or hidden. If security/privacy is important at your event, I suggest you start with everyone hidden and let the ones who wish to visible change their own profile. They will get a prompt when they check their profile.
