We host a multi-day hybrid conference each year with really great success. I would 100% suggest individual sessions. We set our agenda up with all of the sessions for the week and then people are able to login to which sessions they want to attend or can come back and watch them on demand. There are several aspects of a full day recording that I can see as challenging. Definitely the reporting and feedback as you mentioned, but also assigning speakers and moderators, if there are PowerPoint slides or other handouts that will be attached. You also need to consider your video set-up, are all the virtual sessions in the same room? The video feed and settings would have to change for each session as well then.
We use Audience Segments (Virtual and In-Person) to set the availability of sessions so things that are in-person only don't show up for virtual attendees, then they aren't trying to join a session that isn't recorded. We also do a few virtual only events on the agenda, a morning chat, an evening social hour with bingo and a closing discussion with some prizes, so they have some interaction with each other throughout the event.
Ultimately if you are creating the individual sessions for your in-person event, it would be minimal extra work to use those for virtual as well. Happy to chat more if you have any other questions.
