I'm looking to display custom session fields on the session details page in the Attendee hub mobile app. The fields can be added as filters, but no easy way to display custom fields. Is there a workaround?

Currently, the session category and session tags are able to appear on the session details within a session in Attendee Hub. See sample screenshots below from a test session. Could you explore using one of these to achieve what you are looking for? Using Content Tags, Managing Session Categories
