    Can you have a regular added text question come up in your reports ?

    Yes, you need to select it to be included. Or you can run a Question Summary report.

    Yes, you can add data from questions into your reports. Here is the link to a Cvent resource article that provides instructions on how to change report data.

    Yes; I think it's easiest to just run a "Question Summary" (drop down under the "Reports" section. But you can also select it as a field (drag from the full question list into the reported list) if you are creating a custom report or modifying an existing report.
