We are looking to add a registration type called "Joining Member". Is it possible to have 2 separate confirmation emails? Or would they need to be two completely different registration paths?

Yes, it is possible to have two different confirmation emails based on registration type.  You will need to deactivate the standard confirmation email, as it's not possible in that version.  Create two new confirmation emails, and under the Recipients section, choose Filter Audience by advanced filters, and select Registration Type.
