On the survey overview page the activity feed is showing 5 completed responses since activating the survey and sending out the weblink. But our reports only have one completed response. Any ideas why these would not match?

Are you still noticing a discrepancy? Are there any filters or criteria that are applied to the survey report you are running? And which report are you running exactly?
